On Saturday, December 14th, I will be serving a 4-course BYOB dinner focusing on transforming classic dishes, such as birria tacos, into something else (pasta). While the title of this dinner is a bit of a joke, I think we all know the type that I'm making fun of / trying to do a better version of.
We have all seen those pretentious chefs who take some classic dish, and try to combine it with something else where it doesn't belong. This is bad fusion, and not what I'm doing doing.
I will rely on my skill as a chef, and understanding of what makes food good to take these classic dishes, and turn them into something different, keeping the original source recognizable. This can result in some absolutely fantastic food, but it requires the chef to be very mindful, as to make sure you don't end up disrespecting the original food.
